I'm pretty sure you've already read the fic, Tissue of Silver by Fearless Diva has fatherly! Snape and the fics evolves around the letters exchanged between the two.

Another really awesome fic that fit this is Rasberry Jam. Where Snape is Draco's godfather whose more like is father than Lucius is. It's about Draco comming into his inheritance and needs someone to watch over him in his weakest moments. The choice: Harry. I'm sorry I don't have the link to this story and I cannot remember where I read it.. perhaps Fanfiction.net?
